Leveling Cabinets for Granite Countertop

I am mid kitchen install and I was curious about the leveling pre granite installation. I have cabinets backing up on a pass-through a wall. the granite will sit on top of the cabinets (which are level) and then proceed through the pass-through at the same height as the counter (i.e. one big piece of stone). Unfortunately, the pass-through and the cabinets do not line up perfectly (1/8"-1/4" off) and the bottom of the passthrough is not perfectly level. Should I try and plane a board to level it out? will the granite guys just shim it and move on?

Additionally I went the 4 feet path instead of using a base plate on the base cabinets, but when they stand, because the wall is not even, they are not flush with the wall. I don't want to mount drywall anchors though the holes and have them unlevel my cabinets, should I just tighten them enough to be snug but not secure? or put reinforcements behind the holes? or not mount them?

I am a little lost. Help!

I think the critical part is that the cabinets are level. I can only provide a few amateur guesses about the rest (intended mainly to provoke someone with expertise to provide better ideas):

Unless the granite extends some distance beyond the cabinets through that pass-through, so long as the pass-through doesn't protrude above the cabinet level, you're likely OK. Shims, better. A nicely leveled board (planed or cut with a band saw) at precisely the same level as the cabinet tops would make the installers really happy.

I can't think of what sort of drywall anchor would work for you. My guess is that the countertop will provide quite a bit of stability, in addition to the stability inherent in the cabinets being bolted to each other. So connections to the drywall don't have to be especially strong. Perhaps drywall bolts combined with very-gently-inserted shims to maintain wall-cabinet distance?
