My favorite soup to make is mostly a meal in itself, but it's so super easy, that I love it. It's a minestrone that I fondly call "Dump soup" because it requires no chopping

1 large can stewed tomatoes
5 beef boullion cubes
2 cans water
1 package frozen chopped onion
1 package baby carrots
1 package cole raw chopped cabbage (cole slaw in the produce section)
cooked sliced sausage
italian spices
1 bay leaf

Saute the onions and cabbage in a little oil in the bottom of your soup pan.
Add the rest of the ingredients and let it cook for an hour or so. Viola!

Oh, and if you're feeling like doing a little more work, cook some frozen totellini on the side and add it as you serve it. It's great with some parmesan cheese on top and some crusty italian bread.

Hmmmm....guess what I'mmaking for dinner tonight

Throw a can or two of rinsed and drained small white beans or cannellini beans...ups the protein. If you want, take out a cup and puree it in the blender and add it back to the soup to thicken it up.
