My firend Noreen is having her in-laws over for Thanksgiving. Noreen usually goes to their house, and they always start with soup. Funny thing is, Noreen hates soup. She despises it. Seriously, the easiest way to get her to make funny faces is to offer her soup. She will eat clam chowder ("That's not soup!") and once in a while will tolerate chicken noodle, but she has to be desperate.
I love soup, and mkae it often, so I offered to help her out. Her MIL makes chicken broth with pastina and some vegetables, but Noreen wants to try something different. I thought of a few ideas, like cream of roasted tomato, butternut squash...I even have a cream of garlic soup I ahve never made but have always wanted to try!
Does anyone have any ideas? Does your family do soup for large dinners or holiday meals?
I did a curried pumpkin soup for TDay one year, and it rocked. And I hate curry LOL It can be served hot or cold (we had it hot) and drizzled with either sour cream or a bit of sherry (we had sour cream). It's a fairly simple recipe and requires just a little bit of work and can be done ahead and reheated. It used canned pumpkin, cream and a few other things, and I think had some sauteed shallots in it somewhere. I'm sure you can find a decent recipe for one. You could do the same with butternut squash but canned pumpkin is a lot less work.
If she'll eat clam chowder, maybe she wouldn't mind lobster or crab bisque. They're pretty elegant, if she wants to impress the m-in-l and family, pretty easy and really good. Or if she'd like something that seems more seasonal, pumpkin or squash or sweet potato soup with lobster and creme fraiche is yummy too. I've also got a mushroom soup recipe with sour cream that we love. Whole mushrooms, not creamed. I'm a soup lover, but never do it for TGiving or Christmas. It just seems like too much stuff and too much work!
I hope she can find something she's at least a little enthusiastic about. It's no fun to cook something you aren't going to love eating.

Melissa, the bisque idea is also a good one. I'll run that past Noreen and see what she thinks.
I think it's pretty funny that she is going to make something she cannot stand! However, when I asked her why, she said she knows everyone will be happy with soup, and she thinks it will mean a lot to her MIL that she tried.
There is nothing better than squash soups incl. pumpkin with a thanksgiving meal. But thanksgiving also suits other root vegetable soups. On a little lighter side, I make a cream of leak soup that always goes over big.
Along the lines of carrot-ginger is a carrot-orange soup that I got out of the Silver Palate cookbook and love doing. Pretty simple, just some carrots, chicken broth and fresh-squeezed orange juice...if you're interested I'll pass it along.

I am accumulating quite a list for my friend! I love making soup. We usually see my in-laws every Sunday, and I bring a dessert for "dinner" (served at 12:30) or a soup for "supper" (served at about 5:30.) It's often chicken or beef noodle, vegetable, etc. Once in a while I throw in something fun, but they are not very adventurous folks, so if I get too funky I wind up bringing home gallons of soup that I am then eating all week.
