I was thrilled to find a pound of lovely Canadian chanterelles at Costco yesterday (for $8.99!) and now I need to figure out their "highest and best use." A couple weeks ago I did pork medallions topped with chanterelles and shallots sauted and then mixed with creme fraiche. Does anyone have favorite recipes that showcase these fantastic fungi?
My favorite way to enjoy any mushrooms is to saute them and then make a mild cream sauce to put them in. It is creamy, yummy, delicious and filling.
You can make a sort of duxelles and fill ravioli with it too if you're so inclined, or put them into a risotto. Saute them in butter with a bit of garlic before you add them to anything, though.
I agree... yum... yum... yum.... this thread is making me want to run to Costco and pick some up! They opened a new Costco in my area (right behind the old Costco) - they'll be tearing down the old one and adding a gas station - they've now got a big walk-in refrigerated section for all the produce and really expanded what they carry. I'm sure they'd have the chanterelles ...

My current favorite breakfast is an omlette with sauteed wild mushrooms, goat cheese and carmelized onions. (either at home or at Coastal Kitchen on Cap Hill, where I discovered it)
