Susan's gone to Richmond to take Alex for his followup, so Elizabeth and I were on our own for Breakfast. In the past, I've given the impression that I never cook anything more exciting than sculpted hot dogs... Well, that's mainly true I suppose, but sometimes I branch out!
This morning Elizabeth was having a hard time deciding what she wanted to cook for breakfast, but she was leaning towards something egg related. One thing lead to another and we ended up trying French Toast with a couple twists.
1. No regular bread. We used Ezekiel 4:9 bread as we've all be finding we have varying levels of adverse reaction to gluten/bread flour.
2. Instead of milk, I used Rice Dream. We got a great deal on Rice Dream cartons at our local discount grocery because I think most folks in our immediate area don't know what it *is*.

So the basic recipe was something like:
1. 3 eggs.
2. 3/4 cup rice dream.
3. good sized splash of Madagascar vanilla
4. few solid shakes of Saigon Cinnamon.
Mix in small bowl, then pour in shallow bowl (I used a pyrex storage container that's just the right size for t pieces of bread at once.
Cook on non-stick griddle for 2-3 minutes per side and top with fresh honey on plate.
Pretty dang easy and effective breakfast. It was pretty healthy food, nothing we shouldn't be eating, and when we were done I just poured the remaining batter onto the griddle and made them into scrambled eggs.
