Backsplash - where to start and stop

I'm using a tile backsplash, using a reddish terra-cotta style with some artist tiles (see below). I'm trying to figure out how much tile to order, and cannot for the life of me figure out where to start and stop and backsplash. I would like it behind the sink and cooktop, but don't think I want to spend the time and money to go all the way up to the ceiling. Any ideas based on our plan?
