Faucet removal-what if we're not replacing right away?
I have one shut-off valve for our water supply. How do I remove the old faucet and still be able to use the other taps in the house? Are there some temporary caps or valves we put on the kitchen sink supply lines until the new faucet is in (in a week or two)?
Of course, Murphy's Law, we have already loosened the nuts and it appears that water will spray everywhere when we turn the main supply on again. Guess no water until the hardware store opens in the morning!
All the on-line tutorials on removing faucets assume you are replacing it immediately. I suppose I could install the new faucet without the new sink or counter?

Now is the time to add the required shutoff valves to the outlets.
You need one for hot, one for cold, and they need to be in an accessible location. Basically, once it exits the wall or floor, put 'em there. I personally perfer quarter turn ball valves ... costs a bit more than angle-stop valves, but they flow better and are more reliable since it doesn't have a rubber seal that goes bad after a few years.

Re: Faucet removal-what if we're not replacing right away?
Thanks Narf. I assume the plumber who is moving the water supply next week will install regular shut-off valves in the kitchen. I am in the DIY demo phase of the countertop and base cabinets and wonder what I could I install that will cap these lines for now, or do I need to call him for some soldering?
Re: Faucet removal-what if we're not replacing right away?
In that case, yes, there are caps/plugs available.
How does the current plumbing terminate anyways - as a threaded stub, as a flexible pipe, or ??

Yeah, what type/ size of pipe do you have there now? If it's a standard size copper or pvc pipe (3/8 or 1/2 inside diameter) the easiest way to cap it off would probably be the sharkbite fittings Cash Acme - Products - SharkBite® Connection System They are sold at Home Depot and Lowes, but that was the first site I found that had them.
Re: Faucet removal-what if we're not replacing right away?
Sharkbite only works on raw ends. You don't need that!
1/2" threaded copper (I'm presuming it's male?) needs a 1/2" female brass cap. Wrap the male thread with a couple rounds of teflon tape, and screw the cap on.
