Well, I have no first hand experience sewing that particular item, but I do work with vinyl, etc. on a regular basis and yes, you can probably piece and sew two of them together with decent results. I find that vinyl has a tendency to stick to the bed of the sewing machine and won't feed so I always use a piece of tissue or paper underneath that gets torn away once you're done sewing. The caveat is that what I assume must be a fairly thin vinyl material is likely going to be prone to ripping at the seam because you've created all those little perforations.
Have you checked out a fabric curtain? I think they're primarily sold/used in hotels but I'm sure you can find one with enough digging. Or since you're sewing anyway, why not make your own from ripstop nylon or something...as long as water can't penetrate the weave of the fabric, pretty much any type will stop the spray from escaping...you just want something that's not overly absorbent or stretchy and that will dry quickly. Plus then it's washable.
Another idea would be to use something like bead chains or ribbons to add length at the point where the curtain is attached to the rod, sort of like a hospital curtain. I have a ceiling mounted KVARTAL rail that I'm using as the shower curtain rod in my guest bath. I haven't hung the curtain yet, but I am going to use a standard length curtain and buy some bulk bead chain to make big, ~12" long loops to drop it down from the ceiling track.
