We are putting our wall oven literally into a wall, with the back end jutting into our bathroom (it's better than it sounds). On either side of the intrusion will be a toilet and a stacked washer dryer combo. I'd like to enclose the back of the stove and the laundry appliances with cabinets and was thinking a hack of some ikea cabinets might work out. Given our appliances (Whirlpool Duet 27" wide) and a standard 30" wall oven that two 30" Akurum high cabinets next to one another with some custom framework might make a nice "custom look" set of cabinets. The cabinets would be in our bathroom so I'm a bit worried about durability in the more humid atmosphere. Anyone done such a thing?

I've been using kitchen cabinets in the bathroom for years. They're more durable than the standard bathroom cabinets, imo.
i really like the project you're undertaking, i hope you'll post pics!
