Wondering if there would be any issues with wood and water with an undermount sink and the butcher block counter top.

Welcome! Glad you're here!

Someone here has done that (Kristen), and it was beautiful! They used a marine varnish called Waterlox and quite a number of coats IIRC . The thread about it is here:

Thanks for the response, your right her counter top turned out great. Although this still keeps me on the fence due to the whole finishing thing. I don't know if I would have theÂ*patience. Either way I will try to post the before and after of what I finally decide. Thanks again for the reply.
