Extended Electrical Outlet

We are remodeling our kitchen and have the opposite problem of "orangemonkey". We have an electrical outlet that extends out from the wall because there is a brick wall behind it. Seems they built the condo around the brick wall back in 1974. We have installed glass tile on the walls as a backsplash and don't know how to finish it off with a coverplate. Any ideas would be greatly appreciated.
