I really like the look of the walnut effect Pragel countertop but would rather have real wood counter so I can cleanly join the edges, etc. Is it possible to stain one of the various Numerar butcher block countertops (in oak, beech, or birch) to give it the "walnut effect" color of the Pragel countertop? I have no desire to use the countertop to prep food, so if I'm using cutting boards do I need to worry about food safe stains?

Just curious if you know of any specific suppliers with good prices. I googled earlier and one I found wanted upwards of 1k for a walnut countertop the same 96" x 25" piece sold at IKEA.

It partly depends on how fussy you are. If you want premium black walnut, it's going to set you back plenty, but even John Boos (one of the big upscale suppliers) is available in that size in blended walnut for five to six hundred, depending on finish:
Walnut is one of the pricier woods you can pick, but even at $500 it's way cheaper than many countertop materials would be. They're pretty high-end and I'm sure you can find walnut for less elsewhere if you google around.

If you decide to buy Walnut you may want to hand-select your pieces. I would stay away from cut rate lumber suppliers for Walnut. You may find that they include a lot of the cream-colored sapwood that is generally not desirable for cabinetry and furniture. That might actually be an interesting look to a countertop, but just make sure you know what you're getting.
Also, with regard to a food safe finish for your wood, you should know that pretty much all wood finishes are food safe once they cure. The part of the finish that you don't want to consume are the dryers and other chemicals that are added to oils to help them cure in a reasonable amount of time (for instance, pure tung oil can take weeks or months to cure, and that's just the first coat!). Once the finish cures completely those chemicals have evaporated away and no longer present a health hazard. However, you would probably do well to simply apply an oil finish to your countertop and let it cure. I would stay away from anything like polyurethane since if you wanted a plastic countertop you would have just bought linoleum. An oil finish takes a little bit of maintenance but it is easy to do and will look really nice.
