Can someone please provide the dimensions for both the single and double oven cabinets?

All depends on the actual size of the oven(s)...many 30" wall ovens don't require a side trim, only fillers top and bottom.

I'm not sure we understand? You get a cabinet that is 30" wide overall, 28.5" wide inside. The space available depends on what components you add - drawers underneath, door above. The components are completely customizable and up to you.

IKEA offers two choices of oven cover panel - 30"x30" or 30"x40" - to fill the space where you can put a single or double oven. You (or your installer) has to cut the panel to fit your oven - the dimensions of the cutout needed will come from the specifications that come with your oven. There is no previously cut out panel available - unless you should find one in the AS-IS room or from a display on sale.

I see. By looking at the picture online there looks like it has a set opening for the oven. I also did not know it was 28.5" wide which is also what I was looking for. Is there a maximum height before it reaches the cabinet door above?

Not really - You can select what size drawers and doors you want and adjust the height of the fixed shelves to match. For my 88" tall oven cabinet, I put a 12.5" tall drawer, my single oven, an open shelf for my countertop microwave, then 18" tall doors. I could have used a 6.25" tall drawer, lowed the oven and the microwave and had taller doors on top. Or put more than one drawer underneath, raised the oven and microwave and had less cabinet space above.

Check out 88" Pantry Configuration Diagrams - while this is designated for 24" wide pantries, the same idea applies to any of the cabinets. Once you know the amount of space your oven will need, you an configure the rest of the cabinet to suit your needs.
