We opened the box to assemble it and found it was white where everything else has been birch. Does it come in a birch?

Is that a horizontal one? Yep. They only come in white.

We just bought another cabinet boxin the 15x30 size. It was only another $16 for the cabinet body in birch. Theoretically, that will work if we drill new holes for the hardware. It shouldn't be hard because we have the template (the white cabinet). Well, in theory...

Be aware that the regular wall cabinets are not engineered to support weight while hanging sideways. Examine your horizontal cabinet and your wall cabinet side by side, and you'll see that the sidewalls of your horizontal cabinet will be the ones supporting the weight of the cabinet -- they "sandwich" the top and bottom. Same with your wall cabinet in its intended orientation. If you take the wall cabinet and turn it sideways and then mount it, the load will be born by the top and bottom which are not intended to bear the load. Does that make sense?

No problem if you're storing cotton balls, but it may well be an issue if you're storing things like plates and glasses.

Ah...I might see if I can retrofit the beech parts with white parts for security. For me, it's an over-the-fridge cabinet that's gonna store cereal, and needs to be beech because the bottom will show. Appearance is more important than function in this case.
