Here is the fridge wall with the fridge flanked by cover panels, then the adjacent counter over base cab.

Here is a closeup of the problem area. See how counters have an overhang and when that overhang is next to any door that swings open, the door won't be able to swing past 90 degrees. The refrigerator is designed like the ikea cabs in that the 90 degree swing is all within the 36 inches of the fridge. But of course you want a fridge to open further. Now I suppose I could pull the fridge out of its cubby until the front of the fridge cabinet aligns with the front of the counter overhang, but that sort of defeats the purpose of having a "counter-depth" fridge, no? Are there any other solutions besides pulling the fridge out?

Counter depth fridges are measured to the edge of the fridge "box", not including the doors. The doors stick out past the cabinet. In your pic, the box would actually be flush with the edge of the countertop and the doors would be proud of the countertop.

Your fridge should have specs for how much clearance you need to leave next to a perpendicular wall.

Hmmm. If I got the LG fridge, the depth of the box without door is 23 5/8 and it needs 1" clearance at the back, so that makes the box 24 5/8. And if the base cabinet is 24" plus 1" overhang, that makes 25. So I guess pulling the refrigerator out 3/8 more isn't too drastic. I think maybe I need to look again at the fridge in person to eyeball just how the hinges work and whether this would do it.
