I bought enough dampers for the hinges for each hinge (2/door). However, I find they close too slow...I tried taking one off each side and it works a bit better now...

What is the norm?

i think most of the pros use 1 per door

Yes. The IKEA staff by default order two per door, but that's more often than not one too many. I find that only the 24" wide doors and the tall pantry doors benefit from more than one. For smaller doors, two dampers requires you to really slam the door to get it to shut properly.
