The thing you have to watch out for is "engineered" wood floors - the type that has wood veneer on the top and hardboard on the back. The hardboard backing will swell and distort badly when exposed to water, such as from spills, leaks or wet mopping, and damaged pieces must be replaced - they can't be fixed. The same warning applies to Pergo and many other click-lock floors that have hardboard backing.
100% wood,
OTOH
, once thoroughly sealed, should be OK in a kitchen with light or moderate traffic. Heavy traffic may require more frequent attention to maintain the sealer.
