So many choices... Nothing is going to help like ordering some samples and looking at them in your actual home in your actual lighting. The reflective quality of light in your home contains all the colors of the space and makes a big difference in how colors live together. The countertop is a large horizontal surface, so I don't worry about wall colors. Coordinating your floors and counters will allow the eye to travel further in the horizontal plane, expanding the space. It's easier to coordinate a wall color to a counter or tile, than vice versa.
Here's a few samples you may want to consider to ordering. What do you think of Chocolate Truffle. It has recycled glass and a granite-like texture, which gives it a modern edge. Colors are medium browns and ivory tones with touches of stainless gray & black flecks. Oyster has some of the same colors with much more subtle patterning. If you want to go totally subtle, the Desert or Champagne Limestones are worth looking at. OK, none of these are as exciting as Apple Martini. But I'm a big proponent of neutralizing your large expensive surfaces and bringing in your bold colors with paint and accessories.
