I don't believe it would be food safe. Waterlox *is* food safe once cured, and that would help some if used to seal the wood, but if you cut through it I suppose theoretically you could be exposed to the stain underneath.
BTW, I looked at that article and I *highly* doubt that Minwax Ebony was used on that countertop. I am very familiar with that product having dome hundreds of stain samples when we were deciding on a stain for my floors, and the Minwax Ebony does not look anything like that. So, if anyone is interested in staining countertops a dark color, I highly suggest running some tests before settling on a color. I will post pics of my shelves once they are up; the dark stain came out pretty well. But mine are much darker; they look like wenge or walnut shelves.
