I was wondering if when you order you can do it all at once, see how much fits in your car, and then come back for a second (hopefully not third) time to pick up the balance? If so, is it a huge hassle?
Just watching the budget and trying to avoid renting a Uhaul.

if you plan on picking up the same day then yes, for the most part. but they won't be too happy about it and it will be a hassle.
couple of questions:
what kind of car
how many cabs
how many high cabs (pantry/oven)
how many large cover/fridge panels
any counters
any appliances
anything else big
drawer boxes take up a ton of space in the end.
what you might consider (since there is no special running which would require you buy everything at once) would be to separate out your door/drawer fronts and drawer boxes and buy those at a separate trip (you could have a separate order drawn up and they are good for a couple days). i include countertops and anything else not necessary for install into this list. icing on the cake is that your doors stay protected.
and it's easier to itemize all your stuff too.
inevitably most folks end up making a few trips back to ikea, with a planned second trip to buy/pick up the extra items you have that built in chance to include forgotten/amended items.

We have a Honda CR-V, have about 7 upper cabinets (39" high), 10 lower cabinets, 2 fridge panes, no other high cabinets, no counters, no appliances, nothing else big.
If any of the details here are wrong, it is because my wife has done all of the legwork and planning and I'm writing this while she flies our kids to their grandparents house for the week while we do this. TMI but I'm nervous.
one question i forgot was how far are you from ikea
i know the crV well (used to sell hondas and i love LOVE LOVE that vehicle)
you're going to need to break this order up. i have an odyssey and would have trouble fitting all that.
i assume the fridge panels will go on top since we're in a warm season (and i'm assuming you don't live too far.)
with your time line you're going to want to do your install so that the space is livable and the family can be reunited. the drawer installation isn't life threatening and the door/drawer fronts install is DEFINITELY not life threatening. my gut is that if you break this into bite sized pieces you'll get more done cause you will be less stressed.
once you get the hang of assembly you'll be pretty quick. without the big pantries you'll sail right through. and if you're working as a team this could really fly through.
anyway, i'm still going to recommend getting the drawerboxes and doors on a different day. let me think for a few moments about the amount of boxes... (sorry, i'm a bit groggy, i had a minor outpatient surgery this morning so i'm a bit sedated )
oh yeah, how many of your base cabs have drawers in them?
what door are you using and is it an instock door at your ikea? could you drive 2 cars that day for pick up? if so, what would the 2nd car be? any chance you can borrow a friend's mini van and take out the center seats and fold down the back?

this is something like 7 walls, 8 base, a pantry and some coverpanels along with some flooring. all but the front seats out.
Hmmm. We are about 40 miles away, so I'm thinking we should just rent a truck to be safe. I have no idea how many have drawers - my wife is in charge of that stuff

well, i hope i didn't scare you, but in the end your order probably merits the renting of a truck. you'll probably have less stress in the end, and with such a tight timeline you're better playing it safe.

Follow Up:
We ended up renting a 10' Uhaul and it worked out well. We probably could have gotten a cargo van, but having the 10' probably made it a bit easier to pack up the truck, although that took the most time. We had 5 Ikea carts of boxes and stuff and just taking inventory, bringing back damaged stuff before we loaded it, and getting it packed well took about 2.5 hours. We waited about an hour for the order to be ready. Overall we were at Ikea for 5 hours. Probably would have taken an hour less but we had breakfast and lunch there too
All the cabinets are in the garage, and just waiting for the crew to get the hardwoods in the kitchen before we begin installation.
