It's definitely doable, I'm currently sleeping on a roll-your-own memory foam mattress on a MALM bed. I put a few textbooks under the centre of the main rail to provide five points of support, but I'm not sure it's necessary.

Yeah, the Malm's are an OK addition. Really, it's hard to go wrong as long as you have the proper thickness. But it's better to have a thick mattress plus a memory foam topper with high quality memory foam. Tempurpedic is obviously the most famous, but there are others out there too. Here's a comparison to Tempur-pedic for you to check out.
